New cheese vacuum packaging machine

Vacuum packaging is a packaging technique in which after an article is loaded into an airtight container, it is evacuated before the container is sealed so that there is substantially no air in the sealed container. This packaging technology has a wide range of applications in many products. Among them, the same is true of cheese products. Nowadays, many cheese vacuum packaging machines with new functions come out one after another. One of Alcan's embedded vacuum packaging machines with ribbed cavities is one of them.

Regardless of whether food protection is accidental or desirable, cheese processors have developed a strong interest in the latest vacuum chamber systems from Multivac Cryovac and Alcan Packaging.

The chamber of a vacuum packaging machine can accommodate blocks weighing 1 pound to 40 pounds. Larger pieces can be packaged in an improved device. Bill Williams, Multivac's product manager for cavity systems, said: "By moving the sealing strips, the cheese processor vacuum-packs 260 pounds of Swiss cheese, using hard cheese made from skimmed milk and other cheeses instead. Only vent tube vacuum equipment (only 0.5% of total) in the chamber can be drained."

The automatic and semi-automated bagging system opens the way for the application of smaller product cavity technology. Bill Kuecker, director of food service marketing at Duncan SC-based Cryovac, said: "Effectively placing the product in the equipment is a major issue." Tillamook Creamery converted the rolling stock into a face-up infusion of a 1 pound cheese block vacuum bag. This form of conversion removes the ear-shaped handles that are rolled into stock.
